No, no, I didn’t become a master at recipe creation (yeah right … I have no patience for it!) but I did discover two recipes a couple weeks ago that are to DIE for. So, I just had to share!
As many of you know, I’ve been participating in a nutrition challenge with my Crossfit box. I’ve also told you that I’m sick and tired of it, even if I wish I wasn’t. These two recipes are challenge-friendly (aka, Paleo), BUT – no joke kids – I will keep them on the rotation from now on, regardless of how I’m eating.
Psh, now you guys think I have a rotation. Yeah, right.
First up …
Curry Meatballs from PaleOMG
I love curry, so the idea that I could make it in something other than traditional Indian food really appeared to me here. I’ve made these twice now. Once, with ground beef (I forgot to buy ground turkey) and then once with the ground turkey as called for. I’m not sure if it was due to the change in meat, or my choice to let the meatball “batter” chill in the fridge for half an hour before rolling the balls, but the turkey batch came out much nicer – my meatballs didn’t fall apart. Winning!
Second, but certainly not least …
Gluten, Grain, and Garbage-Free Chick-Fil-A Nuggets from the Domestic Man
Let me preface this by saying that I’ve never eaten at Chick-Fil-A. Which apparently is a crazy thing to say (I found this out after bragging about this recipe), but it’s just never occurred to me to go there. But, these nuggets are DELICIOUSIOUS. I know that’s not how you spell it – but that’s how good they are. I believe I threw around the term “dipped in liquid gold”. They’re so good, I don’t even miss having ranch to dip them in, which is saying a lot for me.
Seriously, go make both of these recipes now. Mmkay? Then, report back.
